Dubu Jeongol – Tofu Hot Pot

Jjigae (pot stew) is made by boiling a variety of ingredient together in a pot. It is seasoned and flavored with soybean paste, red chilly paste (Gochujang), or dry-fermented soybeans (Cheong-guk-jang).

Jeongol compries of meat, vegetable, or other ingredient simmered at the table in a casserole pan, adding broth when necessary. Jeongol cam simply consist of tofu or mushrooms, but also be prepared with meat, beef innards, Jeon (pan-fried delicacies) or other elaborately prepared ingredients for a more colorful dish.
